What is nougat?
Nougat is a sweetmeat made from whipped egg whites, sugar, honey and roasted nuts. Glace fruits or crystallised fruits are often added for contrasting colours and flavours.
Nougat known as turron in Spain or gaz in Persia. It is a popular element of Christmas meals in southern Europe. Commonly sighted at fairs and the seaside in Britain. As people enjoy the sweet taste and the quick sugar rush. You can also find a derivative in chocolate bars – Milky Way, Snickers.
Traded in Central Asia and Persia during the 10th century . With popularity increasing in the Mediterranean countries during the 15th century.
How do you make nougat?
In past centuries, nougat was made by mixing honey and nuts into egg whites and leaving the mixture to dried in the sun. Nowadays, machinery mix the honey or sugar with the egg white on a low temperature. To maintain softness and enable easy chewing, corn syrup and vegetable fats are added.
