Next-Level Christmas Pudding

(Recipe by Barney Desmazery, BBC Good Food)

Vegetarian – Serves 6

Ingredients

100g sultanas
100g raisins
50g dried figs
50g mixed peel
150g glacé cherries
50g chopped stem ginger + 1 tbsp syrup
1 small piece of fresh grated ginger
1 small apple (peeled, cored, grated)
1 small orange (zested and juiced)
80g light muscovado sugar
½ tsp mixed spice
6 tbsp brandy
60g frozen butter + 15g softened butter for greasing
1 egg (beaten)
50g ground almonds
50g blanched almonds (half chopped, half whole)
50g self-raising flour
60g breadcrumbs
Brandy butter, custard, or cream to serve

Method

  1. Combine fruits, sugar, spice, juice, and brandy. Stir and soak overnight.

  2. Butter a 1-litre pudding basin and line the base with parchment. Mix in the egg, almonds, flour, and breadcrumbs.

  3. Spread softened butter with ginger syrup in the base. Arrange cherries and almonds.

  4. Add pudding mix, cover with parchment and foil, and secure with string. Steam for four hours, topping up water as needed.

  5. Cool, then store for up to two months. Reheat by steaming before serving.
